This recipe is one of my favorites because these can be made as a snack anytime in the day. My Nephew and Nieces love them so much that they are willing to drive from Johannesburg to Durban just to have them. To top it off they are so quick and easy.
I am a fan of cooking with Coconut Oil and used coconut oil to fry the pancakes. The coconut oil adds a faint but pleasant coconut sweetness. Coconut Oil is not only tastier, it's so much healthier than other fats like butter.
1 Cup Full Cream Milk
1 Tsp Vanilla Essence
1/2 Cup Sugar
1 Tsp Baking Powder
1 Cup Cake Flour
Whisk egg, milk and vanilla essence together until light and fluffy. Sift dry ingredients into mixture and mix until it becomes smooth. Pour some Coconut Oil onto a nonstick pan and pour batter. Flip once and cook until it starts to brown. Serve immediately with cinnamon, sugar and ice cream.
