KERALA MEETS DURBAN CHICKEN FRY WITH SLICED COCONUT

Here's the story behind this amazing recipe:

My father had a Chicken Curry with Sliced Coconut on his recent trip to India and it seemed to be the one curry he liked the most. My Mother on the other hand is a Vegetarian and is one of the best cooks in the country. She has never tasted meat, yet she cooks these meat dishes to perfection. She decided to try this chicken curry with our Durban style of cooking. This recipe is slowly becoming a family favorite on our home and you should give it a try too.

Ingredients
  • 1/2 Kg - Chicken Fillet

  • 1 Onion Finely Chopped

  • 2 Tomatoes Finely Chopped

  • 2 Cloves Garlic Chopped Finely

  • 2 tbsp - Coconut Oil or any Cooking Oil

  • 3 tbsp - Sliced coconut

  • Curry leaves a few

  • Coriander a few Stems

  • Salt to taste

  • 1/4 tsp Turmeric powder

  • 2 tsp Chilli Powder

Method
  1. Roast the finely sliced coconut and set aside.

  2. Heat a cooking pan and add oil.

  3. Add Curry leaves and Onions to the pan saute for two minutes.

  4. Now garlic and saute until the raw smell leaves.

  5. Add Tomatoes and cook until the tomatoes cook down and form a paste

  6. Add turmeric powder, Chilli Powder Stir in spices

  7. Add Chicken and salt. Stir well in and cook in medium flame for 5 minutes

  8. Reduce the flame to low and cook it covered for about 20 minutes or until the chicken is done.

  9. Add Chopped Coriander

  10. Finally add the sliced coconut and stir.

  11. Serve with Rice or a bread of your choice
